Breadfruit Cou Cou And Saltfish
We are not going to use salt in the breadfruit as you going boil pigtails with the breadfruit You can have this with flying fish or gravy of your choice below image of the steam flying fish


1/2 lb pigtails
1 large breadfruit peel n cut into cubes
1 medium onion minced or grated
1 tsp Bajan green seasoning
1/2 lb or 2 sticks of unsalted butter/ margarine

Place a saucepan on the stove, and add pigtails cook for about 25 mins to remove salt. Remove from heat and throw off the water, add water again and replace on the stove a second time for another 30 mins or until tender. Now add your breadfruit and cook until breadfruit is cooked .. Pour off the water, take out pigtails and rest aside. Add butter or margarine, onions, and seasoning mash as smooth as you can, to place your plating, put mash breadfruit in a small bowl with a little butter and turn on to plate, serve with your saltfish gravy. (to serve 4 persons)


1lb boneless salted cod
2ozs butter
2 medium onions, thinly sliced
2 tablespoons finely chopped garlic
1 sweet pepper thinly sliced
2 cups 16oz canned tomatoes or 2lbs peeled fresh tomatoes, sliced
1 tablespoon curry powder
1 sprig fresh thyme
1 sprig fresh marjoram
2 sprigs fresh parsley, finely chopped
1/2 cup water
Salt and freshly ground pepper to taste
1 teaspoon pepper sauce


Boil saltfish in plenty of water for 20 minutes. If still too salty, repeat. Drain salt fish, break into wedges, check for bones and set aside. Heat butter and saute the onion. When beginning to brown, add garlic, salt fish and sweet pepper and saute for a further 3 minutes. Add tomatoes, curry powder, herbs, water, pepper sauce, and black pepper and simmer uncovered for 15 mins or until tender. Salt to taste.
